Eater’s tireless restaurant critic Bill Addison cris-crossed the nation in search of the best new restaurants in America. His gastronomical tour concluded with an excellent list of 21 Best New Restaurants in America. The list, released today, includes refined Southern restaurant Olamaie in Austin’s Judges Hill neighborhood. Among the dishes Addison loved at the restaurant from chefs Michael Fojtasek and Grae Nonas, the crudo served with coconut ash (it is stellar).
About the two-headed chef team, Addison writes: “Fojtasek and Nonas modernize Southern cooking with haute technique and artistic plating, yet they never lose touch with the essence.”
